Chicken Yakitori

One of the tastiest and easiest dinners to make is what the Japanese call “yakatori” - marinated chicken pieces on a skewer - served on a bed of rice.

 

To make yakatori, you need a package of Albertson’s Boneless, Skinless Chicken Breasts cut into 1 1/2-inch cubes. If you are using bamboo skewers, soak them in water while you’re preparing everything, so they won’t burn on the grill or under the broiler.

 

The marinade is simply equal parts soy sauce and Sherry (maybe 2 tablespoons each), with about one tablespoon each of chopped garlic, chopped fresh ginger, and sugar. Marinate the chicken cubes in the mixture for as long as you can - up to about 2 hours. [Those ingredients again are soy sauce, Sherry, garlic, ginger and sugar.]

 

Grill the skewers or broil them for just a couple of minutes per side, and baste them with the marinade. Yakitori is simple and easy - and you surely can’t beat a five-minute marinade prep and “2 minutes per side!”
